The Recipe: Simple Ingredients, Extraordinary Flavor
  • 1 tablespoon butter
  • 3-4 scallions, sliced thin
  • 1 1/2 cups chicken broth
  • 1 1/2 cups water
  • 2 cups Castor River Farms long-grain white or brown rice
  • 2 teaspoons dried, minced onion
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup freshly chopped parsley
Directions:
  1. Rinse rice in cool water; drain.
  2. Heat the butter in a medium saucepan over medium heat.
  3. Add the scallions and sauté for 2-3 minutes.
  4. Add the rice and stir until rice is fully coated with butter.
  5. Add 2 cups of water and 1 cup of chicken broth and bring to a boil.
  6. Add the onion, salt and pepper, cover and reduce heat to a simmer.
  7. Cook until the liquid is absorbed and the rice is al dente - 18-20 minutes; check at 15 minutes.
  8. Remove from heat; fluff the rice with a fork and stir in the parsley.
